Cookies!

Tomorrow night (5/18/11) is the final night of Sparks (AWANA club) - first awards, then store (where the kids get to spend the "bucks" they earned by attending, bringing dues, wearing their uniform, bringing their bible/handbook, and learning their verses); and refreshments. Being I was feeling all invigorated yesterday for some reason, I made a batch of peanut butter cookies. DANG those were tasty! So, for refreshments, I'm going to be making more cookies:

Peanut Butter Cookies (Betty Crocker recipe)

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/4 cup shortening
1/4 cup butter or margarine, softened
1 egg
1 1/4 cups Gold Medal® all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2.5 hours or until firm. (I skipped this, and went directly to rolling them). Heat oven to 375ºF. Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar. (stick the fork first into the dough, so that the sugar will adhere to fork) Bake 9 to 10 minutes, cool on rack. If you don't want them to get soft, don't leave them out (also they tend to get eaten quicker if you do)

OATMEAL SCOTCHIES (we love these!)

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract or grated peel of 1 orange
3 cups quick or old-fashioned oats
1 2/3 cups (11-oz. pkg.) butterscotch chips (I'm trying Guittard chips, as they do not list artifical flavor in them)

Mix cinnamon, flour, baking soda and salt together in a small bowl. In another larger bowl, beat both sugars, butter, eggs, and vanilla extract together till well-mixed. Gradually add flour mix. Then stir in (carefully) the oatmeal, and then the chips. Drop by rounded teaspoonfuls (I find ice tea spoons handy for this) onto a baking sheet (ungreased). Bake 8 to 9 minutes. Less for chewy, more for crispy.

Hubby didn't think he'd like those, but he did. A whole batch...downed in one evening!

And then I'm making toll house cookies - recipe is on the back of the package. This time I bought the mini chocolate chips. Maybe it will look like there are *more* chips than usual.. even though the amount of chips in the bags of regular & small chips are the same by weight.

Also making cupcakes, Funfetti ones, with vanilla frosting & rainbow sprinkles.

    I didn't think they still HAD those AWANA clubs...I remember those from YEARS ago.
    And those cookies sound yuimmy.

    I just made a spice cake w/ cream cheese frosting, so we must be thinking alike today.

  2. Yes, they still have AWANA. We will be doing a different program next year, I think Discovery Kids, a bit cheaper...esp. being most of the kids don't bring dues, don't pay for their books, or buy a vest. And of course, mom has her smokes, etc and cell phone. But can't pay $10 for a book for their kid :|

    The oatmeal scothies are really good. MMM spice cake. Did you put raisins in it?

    Mom used to make cole slaw, with pineapple in it, mayo thinned with some of the pineapple juice, and she'd put in those little colored marshmallows too. I don't know if it was to GET us to eat cole slaw, but it just doesn't seem right without them in there.

    When I was making the cake, I thought it "needed something"...didn't know what, though.

    After it cooled, was frosted and I got me a slice, as I bit into it, THEN I knew what I should have included...
    RAISINS!
    (the blonde ones, and not the regular ones, too)
    Love those in tea biscuits, too.
    No one makes THOSE in Indiana, apparently (sighs).

    I promise...NEXT time for sure!

  4. LOL Raisins are a must in carrot cake too. That is the way mom always made them. Hmm. In one of the little cookbooks I got from mom, is one that has spice bars in there - with a butter frosting. I will look for it when I get home, and post the recipe on the blog. And yes, they have raisins in the recipe.
